This is so easy and you can make the entire meal in the time it takes to cook the rice. I always add in black sesame seeds, sushi ginger, edamame, sliced cucumber with sesame oil drizzle and seaweed salad for extra nutrients and to expand the kids taste buds but these are optional! INGREDIENTS: - 3/4 lb fresh raw salmon 2 tablespoons Dijon 1 tablespoon lite tamari/soy sauce 1 tablespoon sriracha (optional) 1 cup rice chicken bone broth (optional for cooking the rice in. Can use water instead)I also add in salt and butter 1 jalapeño, sliced (optional) 1/2 red onion, sliced scallions, chopped fresh cilantro sesame seeds STEPS: Preheat oven on the broiler setting @ 500F Prepare rice according to package instructions. You can use chicken bone broth like I did or just use water as your liquid. Cube raw salmon into equal pieces (pro tip: do the boiling water trick to remove the skin easily) In a bowl add Dijon, soy sauce and sriracha and mix - add this mixture to the salmon and coat evenly. Add salmon to a lined baking dish. Add jalapeños, onion and scallions to a separate lined baking dish (sometimes I will leave it all on the same baking dish and just remove the veg sooner and put the salmon back in) Broil salmon and jalapeños, onions and scallions at 500F for 6-8 minutes (space out the pieces of salmon and broil on top rack about 6 inches from the top of the oven) Then build your bowl and top with sesame seeds and fresh cilantro and any other toppings you love.
